Cats love cake poki. Or at least they really love cake. So they’ve been getting a lot of it lately, and I think they deserve it.
But it’s not fair, because I never make it for them. I’m a bad mom, right?
So when I saw a recipe for pumpkin cake with maple frosting on a blog I liked, I was thrilled. That’s the sort of thing I would happily bake for the cats.
I made it and it was really good. The cats loved it, too. It was a success.
I then decided to make it for all my friends.
I thought they would like it, but maybe they would be surprised. Would they like it?
The answer came quickly. Yes. Yes, they like it.
Yes, I’m a bad mom. I’m not sure if that means they loved it or they just liked it, but I think it was both. Either way, I’m going to keep baking things for them.
This cake was pretty good, but I think it was better with a little more pumpkin. I’ll make it again for a normal-sized pumpkin, but if there’s any left over, I’ll double the recipe next time.
A few weeks ago, I made a pumpkin cake to take to my in-laws’ annual autumnal celebration. It was a hit. Everyone loved it.
This year, I decided to make another pumpkin cake for their family event next week.
I found a recipe for a simple pumpkin cake in a magazine. I had lots of canned pumpkin in the fridge. But I didn’t have any more brown sugar. It was getting close to the end of the pumpkin season, and my local grocery store’s shelves had all the brown sugar I needed.
I decided to make a cake that would be sweet and moist, with a light touch of spice, and it would be a perfect end to our pumpkin harvest.
I was pretty happy with the result, and so were my in-laws.
So I decided that I’d bake something else this week. Not just for them, but for all of my friends.
I had the pumpkin cake recipe, so that was the first one I picked. But I also made this recipe for the pumpkin bread I made for the kids last weekend.
And then I had the coconut cake recipe.
I love making cake for people. I love baking with my kids, and even making cookies with them. But baking with my friends?
It’s like I’ve got this huge, wonderful, awesome oven in my kitchen and I haven’t opened the door in months.
I guess it’s not really that much fun to bake for yourself. Maybe you never should have baked in the first place.
Maybe you should be a better friend, and bake for your friends.
This coconut cake was good. It’s not too sweet and has a perfect amount of spice. It’s like a dessert, and a snack, and a breakfast. I can have a little slice, and feel like I’ve eaten a big breakfast.
I’m making one more recipe today, and then I’m going to get ready for Thanksgiving and my family’s holiday feast. I’ll share recipes for both of those in the days to come. I’ll even post recipes for the Christmas festivities. I’m really busy planning and I don’t have much time to bake!
